Meatless Days

Boy was I excited the day before we left for our vacation to Wisconsin this summer when the books I had ordered arrived.

I love to read so I usually take 2-3 books with me whenever I go on a trip.

My excitement dissipated when I got into the first few chapters of Dr. Esselstyn’s book Prevent and Reverse Heart Disease, The Revolutionary, Scientifically Proven, Nutrition-Based Cure.

Here I was in America’s dairy land with cheese curds as far as the eye could see, and I was reading all about the benefits of not eating dairy.  Not only that, Dr. Esselstyn was also recommending not eating anything that has eyes.

We were going to be fishing! What about the all you can eat Wednesday Night Chicken Wing Ding?  What about the Friday Night Walleye, and Tuesday Night Prime Rib Special?  And no limburger cheese? – Yeah, most of you probably wouldn’t have any trouble giving that up. What about my Monk Burger? etc. etc. etc.

What could I do? I enjoyed the vacation as planned.  I didn’t over indulge in any of his no-nos, but I broke my fair share of his rules.

One rainy day while I was reading The China Study Cookbook, by Leanne Campbell PhD, my son looked over my shoulder at the Coconut Corn Chowder recipe and said, “Gross!”

So of course that was the first recipe I tried out when we returned home 😀 !

Everybody enjoyed it except my son who refused to try it (hereinafter Mr. Resistant).

I’ve been easing more and more meatless days into our weeks.  Here is what they look like:

Stuffed Baby Portobellos with Spinach

If you like mushrooms, stuffed portobellos can give the illusion of eating a piece of meat.  These are quick and easy to make too.

Scoop out Tomatoes
Saute Onions & Garlic in vege broth then add chopped spinach
Add prepared couscous to spinach & onions then stuff tomatoes

I’ve made stuffed peppers before, but never stuffed tomatoes.  They are easy to scoop out and were a hit with everyone except Mr. Resistant.

My goal is to start with having meatless days 2-3 times a week.  Hopefully, after a while even Mr. Resistant will be enjoying meatless meals and we’ll have meatless days more often than not.

“But why?” you might ask.

Because there is data that shows the excess consumption of protein leads to disease (in particular, animal protein).

If you are doubtful, don’t take my word for it.

Instead, take twenty minutes of your time to listen to T. Colin Campbell PhD.

He is a biochemist with over 50 years of experience specializing in nutrition.  In this Ted Talk he explains how the expression of your genes is controlled by nutrition.  He is proposing that taking a more wholistic approach to health rather than focusing on one disease at a time is the answer to our current health care crisis in the United States.
