It’s Oktober in Zinzinnati! This week in celebration of Oktoberfest we have German Sauerkraut Soup on the menu.
I love this soup because the leftovers make for good lunches later in the week.
ATTENTION Please Note: I have since made changes to my nutrition including NO meat & animal products (including dairy, cheese, and eggs). Therefore, I no longer recommend this exact meal plan. Now, I leave it as an example of how we can tweak recipes and still enjoy some of the meals that we always have liked. For instance, baked potatoes, broccoli & cauliflower are still in, pork chops are out.
Tuesday we will be having pork chops with baked potatoes and steamed broccoli & cauliflower.
Also on the meal plan for the week is spaghetti with dice portobello mushroom “meatballs.”
Next we will be having black beans and rice (which also can be use for lunches later).
On the meal plan for Friday is shish kabobs. I like these because I can go meatless and yet Mr. Resistant doesn’t have as much to gripe about.
Since March I’ve lost over 15 lbs! 🙂
As far as I’m concerned, meatless days put together with increased greens have been a big part of my success. At the beginning of November I’m going to have my cholesterol levels rechecked and see if I’ve made progress there too.
In case you haven’t been following along, I have been taken with the facts presented in Dr. Esselstyn’s book Prevent and Reverse Heart Disease, The Revolutionary, Scientifically Proven, Nutrition-Based Cure. It is hard to believe, as he points out, that more than $250 billion is spent annually on heart disease in the United States. Yet most of that money is spent on treating symptoms through medications and interventions rather than prevention.
In the book, Dr Esselstyn talks about how the fee-for-service model we practice in this country keeps preventative medicine from being a priority in a doctor’s life.
This excerpt from the book pretty much sums it up: “I once asked a young interventional cardiologist why he didn’t refer his patients for a nutrition program that could arrest and reverse their disease, and he replied with a frank question:”Did you know that my billed charges last year were over 5 million dollars?”
There it is.
