This tomato pesto sandwich makes a tasty lunch or dinner. I used the pesto recipe from The China Study Cookbook. Basically, it’s just basil, pine nuts, garlic, water, salt and pepper to taste blended together for pesto. I like it because it’s healthy, easy, quick, and tasty.
Slice a tomato fresh from the garden.
Toast some bread.
Spread the pesto on one side.
Add tomato slices.
Lunch is served!
