Classic Italian tomatoes & pasta is another great recipe for tomatoes fresh from the garden.
Classic Italian Tomatoes and Pasta
1 pound of cherry tomatoes (about 2 cups)
2 tablespoons of olive oil
7 ounces strozzapreti pasta
salt
2 tablespoons of Italian spice mix
2 tablespoons basil garlic infused olive oil
fresh chopped basil leaves
Parmesan cheese
Bring pan of lightly salted water to a boil.
Wash and quarter tomatoes.
Add pasta to water and cook about 8-10 minutes.
In a saucepan, heat olive oil on medium heat. Then add tomatoes.
Simmer tomatoes for about 8-10 minutes stirring frequently with a wooden spoon.
Remove from heat and add Italian spice mix. Cover for 5 minutes.
Drain pasta and add to tomatoes, tossing to coat.
Mix in herb infused olive oil.
Garnish with fresh basil and Parmesan cheese and enjoy!
