Create a delicious chocolate pudding using silken tofu instead of dairy. It is fast and easy with only a handful of ingredients.
In a food processor or high speed blender combine:
- 12 ounces of silken firm tofu (make sure it’s silken)
- 3 to 4 Tablespoons of cocoa (depending on your tastes)
- 3 Tablespoons of maple syrup
- 1 & 1/2 teaspoons of vanilla
Then blend until smooth.
Nothing to it!
You can get fancy with your toppings or just eat in plain. I’ve topped it here with a raspberry and would have added a mint leaf if I had them available.
Sometimes I top it with a sprinkle of granola.
