Stay Warm and Cozy with Vegetable Soup

As the cool weather begins I love to stay warm and cozy with soups. This lentil vegetable hits the spot! I love making homemade soup because I know exactly what is in it and what isn’t. This recipe contains no animal products and no added oil.

First, in a soup pot place about 1/2 cup of vegetable broth. Then over medium heat, saute chopped red pepper, chopped onion, and carrots. I usually use 1 onion, 2 carrots, and however much red pepper I want for color. Add a pinch of salt to bring out flavor.

After the vegetables soften, add about 2 cups of water and 2 cups of vegetable broth. Then you can add about 1 cup pre-cooked lentils or 1 can of lentils and other vegetables that you want. I use about a cup of steamed green beans and 1 cup of steamed corn. You can also add pepper or other spices to taste.

Cook for about 15-20 minutes over low to medium heat, stirring as needed to prevent sticking.

A fun way to present soup for a meal is in a bowl lined with mashed potatoes or a bread bowl. Either make this lentil vegetable soup more filling with a warm and cozy satisfaction.
