Where have these irresistible sweet potato and black bean tacos been all my life? I don’t know because for most of my life I wasn’t looking for anything that had to do with sweet potatoes. I did not like my experiences with sweet potatoes as a kid and until about a year ago I didn’t eat them except maybe once a year.
All that has changed.
Now I love sweet potatoes! I was out with my family recently and had some delicious sweet potato tacos. I wanted to recreate them in my own kitchen and this is what I came up with.
Sweet Potato and Black Bean Tacos
1/2 teaspoon chili powder
1/4 teaspoon ground cumin
1/4 teaspoon garlic powder
1/4 teaspoon salt
In another bowl combine:
1/4 cup chopped red onion
1 15 ounce can of black beans, drained and rinsed
2-3 medium sized sweet potatoes, diced, and roasted or par cooked
Next, add the spice mixture to the sweet potato mixture and you are ready to put it in a taco shell or soft taco. Top with pickled cabbage and a small dollop of plant-based sour cream.
These sweet potato tacos make an irresistible lunch or dinner any day of the week.
