If you like hominy you will love this tasty vegan two corn soup recipe. It is fairly simple to make and the ingredients are usually easy to find at a grocery store.
Tasty Vegan Two Corn Soup
2 medium onions, chopped
3-4 cloves minced garlic
1 29 ounce can of hominy, rinsed and drained
1 15 ounce can of whole corn, rinsed and drained
1 can diced tomatoes or Rotel
1 15 ounce can of pinto beans, drained and rinsed
2 -3 cups of vegetable broth (or water)
pinch of salt
1 teaspoon of dried oregano
1 teaspoon of cumin
1 teaspoon of chili powder
In a soup pot over medium heat, saute the onions 4-5 minutes in 2-3 tablespoons of water. Add garlic, pinch of salt, oregano, cumin, and chili powder and cook about 1 minute longer. Then add remaining ingredients and simmer on low heat for 45 minutes to an hour, stirring as necessary to keep the soup from sticking. (Or you can put the onion mixture and remaining ingredients into a crock pot and cook for a few hours.)
