Sweet Potato & Black Bean Tacos

Sweet potato and black bean tacos make a delicious meatless meal for lunch or dinner.

Sweet Potato & Black Bean Tacos

2-3 small sweet potatoes diced and par cooked or roasted

15 ounce can no salt added black beans with liquid

1/4 cup chopped red onion

1/2 teaspoon chili powder

1/4 teaspoon cumin

1/4 teaspoon garlic powder

1/4 teaspoon salt

Heat all ingredients in a large skillet on low to medium heat. Serve in taco shell topped with pickled cabbage and a small dollop of vegan sour cream. I find it is also delicious on rye toast.
