I have been playing around with different veggie burger recipes for a while. This one got reviewed by my tester as “the best veggie burger in the world, – even better than store-bought!”
1 cup oats
1 & 1/4 cups of cooked rice
1 can kidney beans, rinsed, drained, and mashed
1 & 1/2 cups chopped spinach, thawed and squeezed
1 chopped onion
1 package mushrooms, chopped
3 cloves garlic, minced
2 Tablespoons low sodium soy sauce
2 Tablespoons Worcestershire sauce
2 Tablespoons Dijon mustard
1 teaspoon paprika
1 teaspoon lemon juice
1/2 teaspoon black pepper
In a skillet with a couple tablespoons of vegetable broth, sauté the onion and mushrooms over medium heat until soft (about 8-10 minutes). Drain any remaining liquid and add the garlic, soy sauce, Worcestershire sauce, mustard, paprika, lemon juice, and black pepper.
While onions and mushrooms are sautéing, mix oats, cooked rice, spinach and mashed beans together in a large bowl.
Add the onions and mushrooms to the bowl after they are done. Stir all together and allow to sit in refrigerator about 20 minutes.
Shape into patties and grill on a griddle or flat top grill for 4-5 minutes on each side. Place on a bun and add toppings of your choice to create the best veggie burger in the world!
