Give ’em pumpkin to talk about! Make this delicious pumpkin pudding to serve at your next party. Or just make some for yourself to enjoy this fall season.

Pumpkin Pudding Ingredients
- 3 cups pure pumpkin (this is about a 28 ounce can)
- 3 cups unsweetened plant milk (use more or less of this depending on consistency you desire)
- 1/3 cup maple syrup
- 1 Tablespoon coconut sugar
- 2 medjool dates
- 4 teaspoons cinnamon
- 3/4 teaspoons ground nutmeg
- 1/2 teaspoon allspice
- 1/8 teaspoon ground ginger
- 1/8 teaspoon salt (optional)
- 2 teaspoons vanilla
- 1 Tablespoon chia seeds (optional)
Place all ingredients in a high powered blender or food processor and blend until smooth. Pour in container and chill.
Pour into containers and chill until ready to serve.
This recipe for delicious pumpkin pudding can be made with chia seeds for added nutrition, but if you don’t have them (or if you don’t like them) you can leave them out and the consistency will still be fine.
If you are taking it to a party it is fun to label and decorate the whiteboard tops of these 2 ounce serving cups.

I haven’t tried it yet, but I think maybe a thicker pudding could be made and poured into a pie shell, perhaps I would have to add something to help it set. I’d be interested to hear if you have any thoughts or ideas on this.
Or even easier – could serve with a vegan sugar cookie or granola for that pie shell crunch (preferably one without oil).
One thing I have tried is pudding it beside some plain old fashioned oats. Oatmeal is a nutritious meal anytime of day. I love it as a pre-workout or post-workout recover meal.
