If you are looking for a spudtacular sweet potato hummus, look no further. This one does not have any added oil or tahini so it is heart healthy in addition to being perfect as dip on a vegetable tray.
1 can Great Northern beans (or about 1 cup of homemade) rinsed and drained
1/2 cup sweet potato, cooked and mashed
2 TBSPN lemon juice
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/8 teaspoon salt (optional)
1/8 – 1/4 teaspoon ground black pepper
Blend all ingredients to a food processor or high speed blender and blend until smooth.
If you want to substitute pumpkin for the sweet potato, it may not be as spudtacular, but it will still be good. Also, you can use orange juice instead of lemon juice. If you don’t have Great Northern beans, chick peas, or cannellini beans will work just fine.
