Another year, another January, another National Soup Month. I can’t think of a better soup to celebrate the new year with than Welcome Soup, otherwise known as Everything Soup. This soup is hearty and cozy on winter January days in Ohio or anyplace else where there is snow on the ground or frosty windowpanes.
It is a delicious medley of carrots, green beans, peas, onions, bell pepper, mushrooms and potato.
1 onion diced
3-4 garlic cloves, minced
1 bell pepper diced (I used red)
4-5 carrots sliced
1 1/2 cups green beans
1 cup of frozen corn (or one 15 ounce can)
16 ounces of sliced mushrooms
2 cups small diced Yukon gold potato
1 teaspoon thyme
2 teaspoons rosemary
2 cups vegetable broth
3 cups water
The easiest way to prepare this soup is to put all the ingredients into a crockpot and let it cook on high for 4-6 hours.
If you don’t have all day (or a crock pot), place the onion, peppers, carrots, and mushrooms in a large soup pan with about 1/4 cup of water. Cook on medium heat 7-10 minutes or until vegetables start to soften (adding more water as needed to keep from sticking). Add the garlic and seasonings and cook an additional 1-2 minutes. Add the broth, water, and potato and bring soup to a boil. Cook an additional 25-30 minutes on low to medium heat until potatoes are soft. Add salt and pepper to taste and serve hot with oil-free bread or crackers and a side salad.
This soup is perfect for lunch or dinner whether you are welcoming guests or the New Year.
